Creamy Cashew and Pistachio Energy Bites Recipe 

Looking for a quick, healthy snack that’s both nutritious and delicious? These creamy cashew and pistachio energy bites are perfect for on-the-go munching!  Packed with protein, healthy fats, and just the right amount of natural sweetness, they’ll keep you energised throughout the day.

Ingredients:

  • 1 cup cashews 
  • ½ cup pistachios (shelled) 
  • 1 cup pitted dates 
  • 1 tbsp coconut oil 
  • A pinch of salt 
  • Optional: Desiccated coconut for rolling

Instructions:

  1. Blend the cashews and pistachios in a food processor until finely ground.
  2. Add the dates, coconut oil, and salt. Blend until the mixture forms a sticky dough.
  3. Roll the dough into bite-sized balls and, if you fancy, coat them in desiccated coconut. 
  4. Chill in the fridge for 30 minutes, then enjoy!
